ORIGIN OF VARIETAL
The wine is pale yellow with a clear hue. Fine aromas of white flowers and stone fruits encased with a flinty lee’s reduction. The palate is focused and pure with bright melon fruits, sweet spice and a toasted almond oak complexity. The acidity is fine with a lime sorbet-like flavour. An elegant and focused style that will age gracefully. Drink 2021 - 2028.
Fruit is handpicked and gently whole bunch pressed. Juice is settled overnight in tank then gravity fed to barrel. Fermentation occurs naturally in barrel. A range of French oak coopers and formats (300L – 2200lt) with 30% new are sourced to introduce oak complexity. Following primary fermentation, maturation continues on lees for 10 months. Malolactic fermentation is not encouraged. Wine is then racked, cold stabilised and filtered to bottle.
