ORIGIN OF VARIETAL
Our 2019 Chardonnay is reflective of the hot and dry season. A more textural wine compared to the previous year, displays notes of tropical fruits and melon. Not overpowered by oak and influenced by partial-malolactic fermentation. This Chardonnay has the potential to cellar for 10+ years and is best enjoyed at 7-10 degrees Celcius.
100% handpicked in March 2019. Combination of the whole bunch and destemming and pressed, with overnight juice settling. Wild yeast fermentation. Matured in a mixture of seasoned French oak barriques (20% new) and part-malolactic fermentation. Matured on full ferment lees for 9 months. Bottled in December 2019. Unfined and unfiltered.
