ORIGIN OF VARIETAL
The appearance is straw. The nose shows fleshy stone fruits, wild mint and red apple skin as the toasty oak notes duck-and-weave harmoniously. The palate presents white peach, beeswax, and white floral tones which intertwine with butterscotch notes. Meyer lemon and waxy tones give extra depth and interest.
The acid dances between creamy and green apple which marries with the flavour-forward characters into a long, luscious finish. This will happily cellar for 5 – 7 years from vintage. Drink this wine with lemon butter scallops or simply a roast pork with oven veggies.
The 2021 Chardonnay is a blend of three distinctly different vineyards; all three carry their site nuances and contribute something different to the blend. Our home vineyard makes up 60% of the blend where we have the flexibility to conduct numerous small picks to achieve optimum ripeness.
Twenty percent of the blend is the much-loved Willowlake vineyard with the remainder being from a vineyard in Yarra Glen. The juice was entirely barrel-fermented with indigenous yeast and there is 25% new oak in the blend.
After the fermentation was completed, partial malolactic fermentation was encouraged. The wines were left on lees for 6 months with "a couple" of carefully considered lees stirring occasions. The wine was blended, filtered, and bottled in September 2021.
