A creamy, textured palate and a fine bead open up golden apples and ripe nectarines in the mouth; brioche and honeyed characters are balanced by a long finish of tightly structured lemon-lime acidity and a refreshing minerality.
Over in France's Champagne region, the varietal "Blanc de Blancs" indicates a Champagne created entirely from Chardonnay fruit. With the name literally meaning: "White from White", it makes sense then that we use our famous Yarra Valley Chardonnay grapes to produce a world-class Blanc de Blancs! Our 2015 Mandala Blanc de Blancs is made of 100% Chardonnay, and 100% Methode traditionelle, which is the same process Champagne producers follow to achieve the signature bubble and finish, and 30 months en tirage.

The first fermentation took place in tank and a skerrick (10%) of oak. Thereafter, a second fermentation and 24 months on lees. Well judged, although could be a bit fresher. A little less time on tireage? Like drinking a a savoury doughnut, billowing with yeasty inflections. A whiff of stone fruit and mandarin acidity across the finish. Ned Goodwin
