2018 Cabernet Sauvignon
ORIGIN OF VARIETAL
The appearance is a vivid ruby. On the nose, there are cassis, dark cherry, and plum notes. With mocha, gun-flint, and bell peppers present at a second glance. Underlying these aromas are lifted floral tones which are pronounced yet quite delicate. The palate shows dark fruit tones of cassis and plum with spice tones of clove and nutmeg at the fore. Bell pepper, pine needle, and redwood tones all play a subtle but seductive roll. The tannins are mouth–coating yet smooth and graceful which melt into the wine exceptionally well.
The Grapes were sourced entirely from the estate vineyard in Wonga Park. There are multiple plantings of Cabernet Sauvignon on the vineyard, each block having unique characteristics. The grapes were handpicked from our Shed block, and once in the winery grapes were destemmed into small fermenters. Each batch was fermented on merit, with daily pump-overs and rack and returns were used as necessary for tannin structure and also removing any sulphur off odours. The wine was on skins for 2.5 weeks.
After pressing the wine was run to barrel for 9 months, with rack and returns conducted as necessary during this time. In early summer 2018, all barrels were carefully assessed, and only the best barrels were chosen for this blend. The blend is comprised of only 2 barrels, where one barrel was brand new French oak. The wine was blended to the tank on light lees in December 2018 and then was bottled unfiltered and unfined in February 2019. Drink 2020 – 2035. Decanting recommended.

There's a fineness and gentleness across the Kellybrook range and this falls into that elegant framework. It merely flutters with flavour, savoury, spicy with fresh herbs while the lighter-framed palate comes buoyant and bright with powdery tannins. It's not the most complex, but it is one of the most appealing everyday drinking cabernets. Jane Faulkner
