TASTING NOTES
In 2016, the Cabernet Sauvignon grapes were cropped at 1.5 ton/acre and were hand-harvested in early April and processed immediately. Crushed berries in the fermenter were fermented with wild yeasts and the ferments were treated with a light touch to encourage extraction of soft, ripe tannins from the skins.
Once pressed, the wine was transferred to French oak barrels (45% new hogsheads) for wild malolactic fermentation and 12 months maturation. Rigorous barrel selection preceded the blend to ensure balance, fruit intensity, structure and longevity. Bottled without fining or filtration to optimise the expression of the Tokar Estate Cabernet site.
Deep and bright in colour with a ruby edge. The nose screams classic Cabernet with spice cupboard, tobacco, olive, cassis and a fresh violet lift. The palate is medium-bodied with tremendous intensity of flavour, wonderful balance and with plenty of fresh acidity pushing the wine long. Meanwhile the abundant super fine tannins coat the mouth in all the right ways.
