2018 Old Vine Reserve Shiraz
ORIGIN OF VARIETAL
Dark crimson red with a slight purple hue. Amazingly aromatic showing allspice, sweet red fruits, rhubarb and earthiness. The wine is elegant and refined with complex layered textures that dance across the palate adding depth and intrigue. The tannins are structured but fine adding a slight dustiness to the finish. The acidity gives freshness to the wine while the whole bunch component improves sweet fruits, earthiness and savouriness that are well integrated. A complex and lifted style that will improve with cellaring, Drink 2022-2030.
The fruit was handpicked (with bunch selection done in the vineyard) de-stemmed into an open bin and tipped into a 2.5t open fermenter (avoiding the use of pumping). Approx. 30% whole bunches added and then chilled for a cold soak for 4 days pre-ferment. Fermentation started naturally with hand plunging daily. The wine is then pressed off skins, then run directly to barrel to old 500lt puncheon barrels. The wine was then carefully racked and bottled without fining or filtration.

Vines planted '72, hand-picked and sorted in the vineyard, wild yeast-open fermented with 70% whole berry/30% whole bunch, 28 days on skins, matured in used French hogsheads and puncheons for 10 months. The colour is deeper than its sibling, and the medium to full-bodied palate has greater texture and structure. Red fruits are challenged by black, resolved by the very fine but persistent tannins.
