Soumah of Yarra Valley
Owned by hospitality industry veteran, Brett Butcher, Soumah of Yarra Valley is a boutique, five-star James Halliday rated winery known for its Savarro - an ancient green-skinned, tight-bunched variety that was first recorded in the 10th century.
Soumah produces exceptional varietals that you would expect to find in the Yarra Valley, such as Pinot Noir and Chardonnay, as well as eastern French varieties of Shiraz and Viognier. However, northern Italian varieties and styles including Brachetto, Nebbiolo, Marzemino, Savarro and Pinot Grigio are where the winery really shines bright. The team endeavours to search for native northern Italian vines to plant at Soumah to continue the quest to build a little bit of Italy in the Yarra Valley.
The winery has a ‘supervised control’ philosophy in relation to its viticulture practices. The French call it lutte raisonnée or ‘reasoned fight’. The basis for this philosophy is to reduce the use of synthetic fertilisers, pesticides, herbicides, and fungicides as these will eventually degrade the soil and make a weaker vine.

Scott was born into viticulture, growing up on a family vineyard in Mildura. He began his career in 1989 with Yalumba, then went on to gain worldwide experience in the Napa Valley at Oakville Ranch, Loire Valley at Jacques Lurton and over to Malborough at Rapaura. In 2005, Scott designed a new winery which formed a base to produce super premium wines.
